Gluten Free Mincemeat Muffins

Having made my mincemeat and successfully converted some of it into mince pies, I have enough left (it made 2.5 jars) that I have to find other things to do. So I tried (successfully) these simple muffins.

You’ll need a muffin tray and 12 muffin cases. Put the cases into the tray and the depth of the tray will stop the muffins spreading out.

Ingredients (for 12 muffins)

  • 100g soft margarine
  • 100g caster sugar
  • 200g gluten free plain flour (I use the Dove mix)
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 4 eggs
  • 6 tbsps mincemeat (see here)
  • 1 tsp vanilla essence

Method

Pre-heat your oven to 185/190C.

Put all the ingredients in a bowl and mix until light & fluffy. Divide between the muffin cases and bake in the oven for 15-20 minutes until firm to the touch and nicely browned.

That’s it, they are best served warm, will keep for a couple of days and are nice on their own or with custard, cream or any other such thing.
