With the courgettes growing quickly, its easy to miss some so this is a recipe that uses the large ones you’ve missed.
It also continues to use the tomato sauce you made last year when the tomato glut hit. Its also simple and quick.
Ingredients (for one)
Large Courgette (700 grams)
Handful of grated cheese
Quantity of tomato sauce
Thinly sliced ham
Knob of butter
Method
Halve the courgette and hollow out the seeds. Put the courgette into a microwave & oven proof dish put a knob of butter in each half, cover with cling film and microwave for around four minutes until soft.
Fill the courgette with tomato sauce, a couple of slices of ham and sprinkle with cheese.
Place in the oven at around 190C for 10 minutes then grill to finish off the cheese.
That’s it. Tasty and filling a good evening meal or supper.
