Recipe – Courgette Pakoras

Throughout August if your courgettes are doing well, you’ll be actively looking for recipes to use them up. This is a simple lunchtime snack which uses a few easily.


  • 125g Gram Flour
  • 1/4 tsp Chilli Powder
  • 3/4 tsp curry powder
  • 1/4 tsp garlic powder
  • 1/4 tsp ground ginger
  • 1/4 tsp ground corriander
  • 1/4 tsp baking powder
  • mint leaves
  • Vegetables to coat: Courgettes, aubergines, onion, etc..


Cut the vegetables into slices thin enough to fry in a couple or three minutes;

Mix all the other ingredients with water to make a thick coating batter;

Shallow fry in batches putting them in the oven to keep warm whilst cooking the next batch.

And there you are, a tasty crisp snack best eaten with a little chutney.
